Cuisines of Kashmir.

One of the
festive marvels of Kashmir is food. Wazwaan is legendary
Kashmiri meal and with out tasting it, your visit is again
incomplete.
The well known
meat preparations in Wazwaan are:

Rishta:
(meats balls cooked in red chili).

Gushtaba:
(Huge meat
ball cooked in Yogurt).

Kababs:
(Meat rolls
cooked over open fire).

Yekhni:
(Delicious
dish made in Curd).

Rogan Josh:
(Meat Cooked
in boiling oil and red chill's).

Many more
dishes
which can extend up to 40 per meal.

It takes hours
to prepare them. Initially meat is pounded after being made
boneless. Then the secret spices are added in quantities known
only to a very few chefs. After a series of processes, the
food is served into a huge plate where four people take part
in eating the various dishes which are served after regular
intervals of time. |

A variety of
Vegetarian food is also available. Any visit to Kashmir would
be incomplete though without tasting the magic called Kahwa, a
sweet brew emerging from gleaming Samawaars. |
